Instructions to make Bhata Dalma:

  1. Start by washing and soaking the two dals separately for at least 30 minutes. Later wash again and strain extra water. Side by side take a kadhai, heat oil, add chopped vegetables, grated ginger and saute for sometime. Most of them usually don't do this but I do and the outcome is superb. As the vegetables get little bit sauteed add the strained dals, salt, turmeric, red chili powder, coriander powder, pounded black peppercorns and saute all together for 5 minutes at medium flame..
  2. Now transfer this sauteed vegetables and dal into the pressure cooker. Add water covering the vegetables and dal. It must be 1 inch above. Pressure cook for 3 whistles at medium flame. Let it cool and release pressure. Adjust consistency by adding water. Prepare for tempering. Heat ghee in a kadhai. Splutter panch phoron, fennel seeds, add bay leaf and dry red chilies.
  3. Pour in the boiled vegetables and dal into the tadka. Immediately cover for sometime. Remove the lid, add dry roasted cumin and dry red chilies powder, grated coconut and mix..
  4. Add a dollop of ghee and give a gentle mix. It's aroma is awesome..
  5. Garnish with some more cumin and dry red chilies powder and grated coconut. Serve with hot steaming rice....
  6. For bhata (cooked rice) take 1 cup washed and strained rice, add into 2 cups of boiled water. Cooked for 15-20 minutes at slow flame. Rice grains plump up. Hot steaming rice is ready..
