- {Prepare of curd.
- {Prepare of small tomato.

Instructions to make Dahi baigan:
- Take the brinjal & cut it's inner side pieces(like pic). Marinate the brinjal with salt & pinch of turmeric.rest it 10 mints. After 10 mints shallow fry the brinjal on low medium flame. Keep it aside..
- To make a paste of ginger, garlic, red chilli & tomato. To make a paste of mustardseeds&cuminseeds paste.mix the mustard seeds paste with curd. Heat a pan add 1tbsp oil put methi dana, crackle it. Then add chopped onion sauteed till it becomes golden brown. Then add the tomato garlic paste saute. Add salt, turmeric & Kashmiri red chilli powder cooked nicely..
- Pour the curd mustard paste, cook nicely. Then put fried brinjal mix it well. Add a cup of water & cover it..
- Dahi baingan is ready to serve. Garnish with coriander leaves serve it as the main dish of rice..
